If your tools have been stored in cold conditions, it's crucial to let them warm up to room temperature before use. This is especially important for tools containing lubricants, as cold can reduce their effectiveness. Allow a gradual warm-up period of around two hours for optimal performance.
In colder weather, the viscosity of lubricants in your power tools should be adjusted to match the outdoor temperature. Depending on how heavy your usage is, lower-viscosity oils can ensure smoother operation in cold conditions. Battery Care: For mowers with batteries, disconnect and remove the battery. Clean the battery terminals using a metal brush to prevent corrosion. Store it in a cool, dry place away from potential fire hazards.
Cleaning: Brush off any grass, mud, or debris. For the underbody, tip your mower gently to the side and clean. Always ensure the spark plug is disconnected during this process. If debris is caught on the blade, use a stick or tool to remove it - never use your hands.
Clean the Tines: Remove any soil clinging to the tines using a brush or hose. This prevents rust and ensures they're ready for the next use.

While chainsaws might see some action during the winter, especially after heavy snowstorms that cause tree damage, they still need some care:
Sharpening: Ensure the chain is sharp. Clean the chain with a brush and then sharpen it using a chainsaw file, or have it professionally sharpened by our Service team!
Oil: Check the oil levels in the reservoir and replenish if needed. Clean the oil reservoir thoroughly. Ensure the chainsaw's oil reservoir is filled to provide ongoing lubrication to the bar and chain, preventing rust and corrosion. Additionally, inspect the bar for any signs of wear, damage, or debris and clean it as necessary.
Storage: If you're not planning to use your chainsaw during the winter, follow the same fuel storage tips as the other equipment. Store it in its protective case or with a blade guard to prevent accidents.

Over the years, snowblowers have seen significant advancements in technology and design. From improved engine efficiency to ergonomic designs that prioritize user comfort, the snowblowers of 2024 are a far cry from their predecessors. Manufacturers have been keen on reducing the carbon footprint, leading to more eco-friendly models in the market. With modern design advancements and clever use of technology, newer models are among the most agile and easiest-to-control snowblowers on the market, offering convenience like never before.
These snowblowers are ideal for small areas with light snowfall (as in, NOT the Maritimes 😂). They use an auger to scoop up snow and throw it out of the chute. Single-stage can only handle a minimal volume of snow on relatively flat, even surfaces. They’re great for clearing small pathways and light work around the house… but generally don’t pack enough punch for the depths of our winter blowouts.
These snowblowers are built for larger areas with heavier snowfall - the most common type you will find in East Coast garages and mostly what we stock here at Atlantic Outdoor. They use an auger to break up the snow and a separate impeller to throw it out of the chute. Two-stage snowblowers are more powerful and can handle wet and heavy snow.

These snowblowers are the most powerful and efficient models. They use an auger to break up the snow, a second auger to move it to the center, and an impeller to throw snow out of the chute with extra acceleration. If you need to tackle a larger area that receives heavy snowfall or often deal with icy, packed snow, the extra power of a three-stage blower will make quick work of anything you throw at it.

With the world moving towards sustainable solutions, snowblower manufacturers haven't been left behind. The latest models are designed to be more fuel-efficient, reducing emissions and being kinder to the environment. For the most part, you’re getting the same power you’ve come to expect from a quality snowblower with less fuel and quieter operation.
If your driveway is made of gravel, rock, or has an uneven surface, you will need a snowblower that can handle the terrain without causing damage. Single-stage blowers are not ideal for these surfaces because the auger contacts the ground. Instead, a two or three-stage snowblower will be better suited to handle these conditions.
Inclined driveways also require special consideration when choosing a snowblower. Once again, two and three-stage snowblowers are better suited for these types of driveways. A self-propelled snowblower can be a HUGE help for steeper inclines since they are easier to control on hills and do a ton of the legwork for you, literally. As you may have guessed, single-stage snowblowers can’t cut it on hills due to the auger’s contact with the ground.

When shopping for a snow blower, there are several features to consider:
The clearing width determines how much snow the snowblower can clear in one pass. Many two-stage models have a clearing width of 24” - a good starting point for winter on the East Coast. For more heavy-duty applications and larger areas, 28” and 30” clearing widths on beefier models will clear even more snow per pass.
The engine size determines the power of the snowblower. A larger engine is better for heavier snowfall and larger areas. Like clearing width, there’s a typical range at each price point and snowblower type. 200-250cc is the engine size you’ll see with many two-stage blowers, with some three-stage engines getting up over 400cc.
Chute control allows you to adjust the direction and angle of the snowblower chute. Some models have manual chute control, while others have electric or joystick control that gives you a smoother and easier way to make adjustments on the fly.
Wheeled snowblowers are more agile and easier to manoeuvre out of the box. Track snowblowers have come a long way with modern technologies to help with turning (turn-sensing) and speed (RapidTrak). Generally, track models are heavier and sit closer to the ground - so they have an easier time with snow and ice that’s hard and packed down.
Pulling a cord to start the engine, even in the dead of winter, is a much more reliable experience with modern snowblowers today. But even so, a snowblower with an electric start is a nice little quality-of-life feature that helps with those nasty blizzard start-ups.

If you're using bamboo skewers, remember to soak them in water for at least 30 minutes before grilling to prevent them from burning - it will save you the panic of watching your skewers fall apart in front of you on the grill!

Part of our eco-friendly approach as a retailer is selecting and promoting products that, while they may not themselves be eco-friendly or recycled, they are of a higher quality, with longer shelf lives and better warranties, keeping them out of the landfills for as long as absolutely possible.
It's important to consider these factors when buying. For example a $300 BBQ every 3 years is not nearly as environmentally friendly as a $1200 BBQ that will last you 15 years or more!
Flower beds and gardens can be a safe haven for all kinds of wildlife over winter and even more so if the old, dead plants are left. In the market for a chainsaw, are you? Well, you've found yourself in the right place! Choosing the perfect chainsaw for your needs can be a daunting task - but with a few simple tips, you’ll be equipped to find and purchase exactly what you need. Let’s take an in-depth look at how to choose the best chainsaw.
There are two main types of chainsaws that you will find at Atlantic Outdoor: professional saws and consumer saws. Professional-grade models have powerful motors and long bars capable of handling large logs and tough jobs; however, they are also more expensive and require regular maintenance from experienced technicians. Some models even require specific tools and computer programs owned by only the most advanced technicians in order to maintain them. The latest performance and ergonomic features are exclusive to professional and higher-end consumer saws.
Consumer-grade models are great for occasional home use but aren't built to handle heavy workloads or frequent use; they're usually smaller than professional-grade models but still require regular maintenance.
The first step in choosing the best chainsaw is deciding on size. Chainsaws come in different sizes, and the best size for you depends on your level of experience, how often you'll be using the chainsaw, and what type of wood you'll be cutting most often. If you're new to chainsaw work or will only be using the saw occasionally, choose a smaller saw that is easier to maneuver. On the other hand, if you plan on doing more intensive sawing primarily on hardwoods, or have prior experience working with chainsaws, then opting for a larger model may be better suited to your needs.
Size Matters
There's no escaping it, larger saws will do more work than smaller saws and there's not much you can do as a user to compensate for that. We always recommend you find a saw that will do the job you need done then buy 1-2 models above that to ensure you're not disappointed. There's nothing worse than when you just have that one bigger tree left and can't quite get through it. Not only is running smaller saws above their paygrade hard on the saw, it can also be expensive if you get it stuck, ruin a bar or blow the engine.
CCs aren't everything
The main characteristics affecting the size of your chainsaw are the engine's power (horsepower) and the total displacement (cm3). Its important to note that CC's aren't everything!
When looking at saws many people tend to lean heavily on CC's which stands for cubic centimeters. On the one hand this is an easy metric to weigh as its the physical size of the engine. Unfortunately with the ever-changing technology and research & development in the two-stroke industry, the number of cc's doesn't paint a complete picture like it used to. Other metrics worth looking at is the horsepower and overall weight-to-power ratios. Many professional, higher-end saws are lighter but pack a power punch so going 'bigger' may be a better option - Maybe not on your wallet but definitely on your back and joints!
In addition to size, another important factor when selecting a chainsaw is guide bar length. The guide bar is the metal part at the front of the chainsaw where the chain is attached; it determines how deep into a log or tree trunk your saw can cut. The length of the guide bar also matters—a shorter guide bar is easier to maneuver when doing limbing work (i.e., trimming branches and small trees), while a longer guide bar is better for felling larger trees. A good rule of thumb is to go with a long guide bar if you are dealing with more than 10” diameter logs or trees; otherwise, stick with something shorter.
In general, a saw with a 16-inch or 18-inch guide bar is sufficient for most homeowner needs. However, if you frequently cut large trees, you want to consider a saw with a 20-inch or 24-inch guide bar. Keep in mind that a longer guide bar also makes the saw heavier and more difficult to handle, so it's essential to find the balance that works best for you.
In this day and age, the gap between battery and gas powered machines is closing every year! Brands that have been in the battery industry for years like Milwaukee and Dewalt are pushing their way into the Outdoor Power ring and industry powerheads like Husqvarna and Stihl are fighting to keep up! While you can't compare apples to apples on battery vs gas powered there are some real advantages to battery saws:
Gas chainsaws are still the standard for professional, heavy-duty work. When you're spending long hours cutting, you need the power and longevity of a gas-powered saw to see the job to completion. Plus, you don't want to worry about extra batteries or running out of juice.

]]>Every year we hold our breath during the first storm. By this point in the year we have so many units out in the field and if anything is going to go wrong, it will likely happen during the first big snow. Luckily many issues customers call us with are common, fixable issues without much technical background. Here's a few of our top issues and their solutions
Getting your blower out for the first time in the season means you're already up to your ankles in the white stuff and don't have time for anything to go wrong. So when you pull it over and nothing happens, there's few things quite as frustrating!
Luckily there are a few things you can try to get it going.
Not all snow blowers have a fuel shut off valve. If yours does, technicians recommend that people turn their fuel line off if they won't be using the blower for a while. If you bought your blower early in the season or over the summer, some technicians will start and test the blower then turn the fuel line off to burn through the fuel in the line. This stops fuel from sitting in the line and carburetor over the warmer months and going stale.
Has your fuel been in the tank all summer without stabilizer? This might be your culprit. Draining all the old fuel, filling it up again with premium grade and priming the engine may help fix your problem.
*TIP* - Gas station fuel goes stale in as little as 8-12 weeks.
A less common issue but a simple fix is checking your spark plug. Although spark plugs don't fault as much on 4-strok engines as they do with 3-stroke it can still happen. Check you spark plug for cracks, clogs or defects and replace it if necessary.
This one happens more often than you'd think and people often think the worst! Luckily this isn't as major of an issue as it seems.
Ever be blowing along, hear a large BANG then have your auger stop turning? Many people curse and swear at this point and fear the worst! Luckily it could just be your shear pins!
There are a few shear pins on your machine and they are made to do just that; Shear off! When you come up on a tough bunch of snow or snow mixed with ice and your auger is about to lock up, these pins shear off and stop the auger from spinning and potentially damaging the engine.
While this is frustrating for you as an owner, count yourself lucky that you don't have to replace a whole engine!
*TIP* - Extra shear pins come with all the machines we sell - as us where they're 'hidden' ;)
If you've taken a look at your shear pins and they're all in tact, the next place to check is your auger belt(s).
All snow machines have 2 sets of belts, one for the wheels (Drive belt(s)) and one for the auger (auger belt(s)). The drive belts will be further back (closest to the wheels) and the auger belt will be closest to the front of the machine - near the auger.
If you've got a belt that has snapped, stretched or worn bare with no traction left, it needs replacing. Belts wear based on usage. Some people have belts last 5+ years and other people replace belts every year. If you feel your belts are wearing sooner than they should, start looking at your usage.
Snow machines should chew their way through the snow at their own pace. If owners push, pull and force their machines through snow, belts will burn and wear prematurely.
With any issue with a piece of machinery its important to rule out physical problems before tearing into the machine. Sometimes its as simple as a clogged chute that we'll talk about below.
Once we rule out a physical problem, the issue then switched potentially mechanical. With this issue its most commonly a worn auger belt. Before an auger belt goes completely you may notice a reduction in throwing distance and force. Its one of the first indicators that a new belt is needed.
The area that we're located is notorious for wet, heavy storms. This causes major issues when it comes to clogged chutes. That wet heavy snow sticks to the chut and can clog very quickly. Not only is this a complete pain but can also turn dangerous if you aren't careful!
Many blowers now come with a small shovel or 'clean out tool'. This is a 2-3' shovel that mounts to the bucket of your snowblower and allows you to clean out your bucket and chute without putting your hands and arms in harm's way.
*TIP* - NEVER put your arms or hands in the bucket or chute of your snow blower.
They've come up with everything! This Snow-Jet spray we carry is an oil-based spray that you spray in your chute to prevent snow from sticking to the chute and throw further.
Snow blower speed is cable-controlled. If you're having an issue with the speed of your machine, this cable can be adjusted simply and quickly. Check out the video below from our friends at Ariens showing you how to adjust cable easily:
Similar to auger belt issues, drive belt issues can also arise. Having a worn or broken drive belt will mean that you won't have much drive in the wheels and the machine may lurch forward as it gains and loses traction. Checking and replacing the drive belt may be an easy fix.
We saved this one for last because often its a quick adjustment that users just don't notice they can take care of at home. If your bucket is raised too high and not taking enough snow, usually its because of the settings on your skid shoes. These are the two metal or poly 'feet' on the side of your bucket that raise the bucket off the ground.
People with gravel driveways often need to have their bucket raised high as to not take their gravel with all the snow they're blowing. People with paved driveways sometimes want skid shoes raised high to avoid scraping their pavement.
*TIP - Replace your metal Ariens skid shoes with these durable poly shoes to avoid scratching your driveway and garage floors.

]]>Now we've tested this recipe far and wide and so far it has been a hit with all palettes.

Now it should be noted that this recipe is for use with back ribs (St Louis style or side ribs will take longer).
WIPE DOWN RIBS
Prep the ribs by wiping them with paper towels, allowing them to be dry so the binding agent will stick.
Some people rinse their ribs in cold water before wiping clean. This doesn't do much as far as cooking is concerned. Some people like to rinse their ribs to remove old juices and such however there's no evidence to suggest that rinsing meat does anything beneficial and that it may actually increase the risk of cross contamination with other food, countertops and utensils.

REMOVE THE MEMBRANE
This. Is. Important! The membrane is a sticky, tough piece on the meat that isn't very appealing and will make a world of difference in the taste and feel of your ribs.
Some meat pieces like fat and collagen will dissipate when cooked at high heat. The membrane on a rack of ribs however is made up of silverskin which turns hard and chewy when cooked. Best to remove it!
COAT RIBS in binding material. Possible picks include olive oil, mustard of mayonnaise. We use plain yellow mustard on ours!
COAT RIBS in desired rubs (front and back). Some people like to make their own rub (which is super easy!) but we like to use Prairie Smoke and Spice Sweet and Tangy Chicken and Rib Rub. And make sure you layer that stuff on THICK! There's no such thing as too much spice!
LAY the ribs directly on the smoker rack at 225F for 2 HOURS. There's a reason smokers always talk about low and slow! Ribs get their tender, fall-off-the-bone feel from the low temperature they're smoked at.
You mustn't rush perfection!
REMOVE the ribs from the smoker and wrap each rack in tin foil with about 1/4 can of pop, beer, cider or juice each. This liquid will ensure moist, tender ribs and eliminate the risk of drying out. You can use any of the selection we mentioned above. We've tried many and haven't had a bad batch yet!
Once wrapped place the ribs back on the smoker for 1.5 hours.
REMOVE THE RIBS FROM THE WRAP, place them directly on the smoker rack and cost in your favorite sauce. We use Bullseye Chicken and Rib Sauce (with the blur label!) This is another place in the steps where you mustn't skimp! Load those bad boys up!
Continue to apply sauce for about 45 minutes until you're satisfied with the rib tenderness and bark. You'll know the ribs are nice and tender when you lift the rack from the center and the ends droop significantly.
REMOVE AND ENJOY!

This series aims to draw back the curtain on what actually goes on when you drop your small engine items off to our technicians and highlight the need for these equipment tune-ups. The next up in this series: Generators.
Generators are the most abused of all small engine equipment. For the majority of owners, their generators sit in their garage or outside, untouched until needed - usually a dire situation like power outage. When owners need to use their generator, they want it to work well and work right away and having it sit idle for months beforehand creates a perfect storm in the realm of small engine problems.
To keep a small engine healthy, having it run regularly is key. Like a car that stays idle in your driveway a little too long, generators left to sit too long will undoubtedly run into issues if not maintained properly.
Old oil can wreak havoc on an engine. Fresh oil will reduce friction in the engine and regular oil changes will remove the gunk and impurities that sometimes take refuge around the engine.
Oil should be changed every 25 run-hours or at least every year.
Because 4-stroke engines rarely run into spark plug issues, our technicians simply check the spark plug for fire and re-gap it if necessary. If they believe yours needs replaced they'll call and advise you before changing it.
Air filters can be a pain. Some years you won't have to replace your air filters, other years you'll go through 2 or 3. A lot has to do with the atmosphere around your generator both while its idle and while in use. Any debris around from bon fires, car exhaust, driveway dust, grass clippings etc can all clog up an air filter.
We always check the air filter and clean it if possible. If it's beyond cleaning and needs replaced we'll call you for authorization.
As we've mentioned in previous posts, gas can be a real pain. Changing your fuel filter will ensure that debris that can often come in with bad gas doesn't make it into your machine to cause any damage.
Besides the obvious mechanical steps they take above, there are also a few overarching issues that can plague generators.
A lot of what technicians 'look' for during a generator service doesn't involve looking at all - it all has to do with what they hear.
If a generator engine is surging, indicating engine issues, the technicians will hear it before they notice anything visually. Then the search is on for what may be causing it.
Depending on the shape of your generator there are a few other services that may be needed/recommended to you by our techs. We will always call and ask permission before performing any of these services.
The best thing you can do as an owner of a piece of small engine equipment is to use the right fuel and don't let it go stale. We recommend using premium fuel as an close to 0 ethanol as possible.
When you're done for the season you should be using a fuel stabilizer or draining the fuel from your tank to ensure it doesn't go bad.

For the majority of owners, their chainsaws sit on a shelf, untouched until needed - either after a storm or during vacation days when the yard needs a little tidy. When owners need to use their chainsaw, they generally want to use it right away and having it sit idle for months beforehand creates a perfect storm in the realm of small engine problems.
To keep a small engine healthy, having it run regularly is key. Like a car that stays idle in your driveway a little too long, chainsaws left to sit on a shelf will undoubtedly run into issues if not maintained properly.
So you drop your baby off at our counter and wait to hear back. But what happens once our technician puts it on the bench to be serviced?
No chainsaw will cut without a sharp and well-oiled chain! We have a grinder in house that does a lot of the heavy lifting on this chore but our techs still have to run the chain through it, one tooth at a time!
*DID YOU KNOW* You can tell if your chain need sharpening by the kind of debris it spits out when you use it! A fine, dusty sawdust is a sure sign of a dull chain! Sharp chains will spit out thicker chunks and chips.
As opposed to 4-stroke engines where a spark plug rarely has too many issues, 2-stroke engines with an oil-gas mix can sometimes cause problems with spark plugs. Rather than checking and re-gapping the spark plug like we do with tractors and push mowers, on chainsaws we change the spark plug out completely just in case.

]]>Foil Grilled mushrooms are always a hit. But what if we told you that you could enhance grilled mushrooms by wrapping them in foil and not taking shortcuts on flavor? You can use any combination of mushrooms - but we LOVE a blend of button, cremini, and full-sized portabella mushrooms (fun fact: those are all the SAME type of mushroom - just at different ages - hence the “Fungi Family” name 😉).
Add some seasoning, your cooking oil of choice (plus a healthy supplement of butter), minced garlic, and fresh chopped parsley & rosemary. Poke some holes in the top of your foil once wrapped - cook for about 10 mins on one side, and then flip and finish for a few more minutes. This one is fun-guys, trust us!

There is nothing quite like a root veg foil pack. Many of us fall into the routine of simply tossing some sliced potato and onion on the grill - which is excellent - but it doesn’t take much to bring this to the next level.
Add these to your next root veg foil cookout:
Coat everything generously with oil, season to taste, and DON’T skimp on herbs. Dressed up with freshly chopped tarragon, parsley, paprika, and cayenne, this one will be an instant favourite.

The seafood boil is an iconic Southern classic. A huge pot of cooking liquid/stock, filled to the brim with an assortment of seafood and veggies. They’re super convenient for large events and get-togethers. If you love the idea of a seafood boil but don’t have a pot the size of a small apartment or a 50-person family, do a foil-pack seafood boil instead!
Add shrimp, crab legs, corn on the cob, baby potato, sausage, diced onion, and minced garlic to a foil pack.
Then, add some butter and cooking oil, salt & pepper, and whatever cajun seasonings you’d like - we recommend Old Bay. Grill the pack for 15 minutes and garnish with fresh lemon juice and parsley to serve.
This is a super low-maintenance and easy way to have a whole lot of fun eating seafood - be sure to try this out.

In the world of modern grilling, it doesn’t matter whether you’re running a traditional charcoal pit, a pellet grill or a top-of-the-line gas unit, there’s a rotisserie that will fit your setup and let you grill with the best of them. So let’s dive into using a rotisserie and some tips to get you off to a running start this summer.
We are firmly in the trussing camp. Tying your meat with butcher twine is a great way to help things cook uniformly and get a perfect result every time. Even with a chicken, where all you need to do is run some twine around the body so the wings are held against the upper abdomen and then legs are held towards the opening of the abdominal cavity, you really shouldn’t skip this step. Even with a forgiving cut like beef tenderloin, even cooking and doneness are pivotal for an ideal cook.
Trussing also helps your rotisserie motor by not allowing large swings of weigh as drumsticks and wings 'flop' every time the spit rotates. A big swing in weight can really wreak havoc on a rotisserie motor over time.
*PRO TIP* Using the rotisserie forks to 'tangle' the chicken legs in removes the need for twine. For extra support on the wings, these short kabab skewers from Napoleon are a great tool!
Your best friend with rotisserie cooking is INDIRECT HEAT. Sounds complicated, but just means that the source of your heat should be kept away from direct contact (or being placed directly underneath) what you’re cooking. For charcoal grills, this means you’ll arrange your coals off to one side of the grill, away from the protein. On a gas grill, this can typically be achieved by turning off the grills that are directly below what you’re roasting, while leaving the side burners on. Pellet grills and offset smokers give you a leg up on this front, as their cooking chamber and firebox are already in an indirect orientation. But indirect heat is easy to achieve no matter what you’re running.
Some of our gas grills even have an infrared burner at the rear of the grill to provide the best indirect heat on the market! You won't even have to turn on any of your burners!
We’ve said this before, but we’ll say it again: temperature does NOT lie!!
Especially with more delicate proteins like chicken, the line between perfectly juicy and painfully dry is far too small to take chances. Rotisseries do a lot of the legwork when it comes to ensuring an even cook, but take all the guesswork out of when your food is ready and check your internal temperatures throughout your cook. Moreover, we always hear that the safe temp for most meat is 165 degrees Fahrenheit. While this is mostly true, from a practical sense, it’s a bit more nuanced than that.
Right off the bat, you can generally pull your chicken from heat as it hits about 160 degrees, as it will carry through to the perfect temp upon resting. Additionally, 165 is the rule of thumb because it takes 0 seconds at this temp to effectively pasteurize chicken to the point that it is nearly guaranteed safe to eat every time. As you can see from this table from Serious Eats. there’s a bit more to it than simply hitting that temperature and calling it a day.
We’ve had some incredible chicken pulled from the grill from 155-160 and letting it rest for 15-20mins. You will get juicier, more tender chicken every time by simply keeping an eye on internal temp and pulling it at the right time, strategically.
The best part about using a rotisserie is that it keeps things moving for you without any manual effort. The rotation of the unit gives you an unparalleled evenness in your overall cook. Even when cooking somewhat indirectly, as those small bits of fat drip off the meat onto grill grates, burners, or even pieces of charcoal, they vaporize into little clouds of flavour that enhance the smells and tastes you experience in the finished product.

CHARCOAL GRILLS
The Kamado-style has become an incredibly popular type of charcoal grill, and it only takes cooking on this type of grill once to figure out why. The large ceramic body and lid are very dense and retain heat like no other. So, without further delay, here are our top-tier tips for the best burger you’ll sink your teeth into this summer.
It’s not uncommon to see family burger recipes loaded up with additional ingredients in the ground mixture. Breadcrumbs, sauces, seasonings - all going into the patties ahead of time. While there’s nothing “wrong” with this, sometimes less really is more. A simple mixture of whatever your protein is for your patties is all you need for the best and purest burger experience. We’ll touch on seasonings shortly!
Ideally, you’re going to grind your own meat. This lets you customize your ratio of lean & fat to your liking with the freshest possible result (bonus tip: many who prefer their burgers to be less than well-done will grind their own meat at home so they know exactly what is going into their grind). You don’t need an expensive setup to do this; food processors work great - and even some elbow grease + a cleaver will get you a great consistency - close to that of storebought ground meat. However, we’re not oblivious to the fact that most of the time, you’ll be buying pre-ground meat - and that’s okay! Buy as fresh as possible, remember that fat = flavour, and stay away from pre-formed patties.
Bonus patty tips
Thickness - No hard and fast rules. Not too thick, not too thin. Somewhere between ½ - 1” thick is a safe range to stay in.
Loosely formed - Overworking the mixture takes away from your overall tenderness. Even if you’re using a form for the perfect shape, try not to work the meat with your hands too much. Gently form it into your preferred size and shape.
Fat ratio - This is why we recommend grinding your own. It gives you the ultimate control over your lean-to-fatty ratio. The best burger is 80% lean and 20% fat. You can play with different cuts to achieve your ideal texture and flavour when grinding at home (bacon is ABSOLUTELY a viable candidate for your fatty portion of the mix). If buying pre-ground, medium ground is your best bet, as it does typically fall within the 20% fat content range. Lean ground will still give you a solid burger if cooked properly - but, as we said, fat = flavour.
This one might surprise you. Do NOT season your meat until your patties are fully formed. You might be thinking: “But won’t you get a lot more flavour if ALL of the mixture is seasoned?” Here’s the thing: when you season the mixture before forming patties, the salt you’ve added begins to dissolve muscle proteins and causes them to join up with one another. A loosely packed patty seasoned after forming holds its shape but breaks apart quite easily and gives you the ideal end result. Pre-seasoned meat formed into patties becomes much more uniform, firm, and not as appealing once cooked. Don’t believe us? Check out the effect on the cooked patties here!
As for what you season with - we have a couple beef & all-purpose rubs that are fantastic on burgers. The sky’s the limit with what you choose to adorn your burger with - as long as salt & pepper make the cut, you can’t go wrong.
You will see that the debate on when and how often to flip your burger is a fiery one (pun intended). This one truly is up to your own preference. Depending on how thick your burgers are, how hot your grill is, and your cooking style - you may flip only once, or many times. The main rule of thumb is not to force your flips. If the meat is giving you a hard time trying to get underneath, it’s not ready. Wait until it comes loose with ease.
This tip is true for anything you grill. When it comes to proteins, knowing when it’s ready is easily the most important part of the game. Especially with store-bought ground beef, where it is always recommended to reach a well-done internal temperature, it’s very easy to overshoot and overcook. An instant-read thermometer is a surefire way never to miss the mark. While the temp readings from a thinner patty may be less reliable, when you’re still figuring out your groove, it’s wise to have a helping hand to gauge doneness for food safety and best results.

]]>Our friends at Broil King have a great visual for all sorts of different beef cuts and they make it so easy! We don't want to reinvent the wheel here so we've put it below! The top 4 cuts are found along the top of the cow and the bottom four run along the bottom. Each cut offers up vastly different flavours and each respond differently to different cooking temperatures and techniques.
Some people like to just take their cuts and throw them on the grill, some like spices and seasonings, some like marinades and have extensive pre-grilling rituals. There's no right answer here but we're fans of buying high quality, local beef and letting the fresh flavours speak for themselves. With a little bit of olive oil and salt and pepper, you'll be all set!
Everyone has their favorite grilling method but when it comes to steak there are a few tried-and-true tips to follow for the best steak.
Because almost all steaks are going to be in the 1-2" range, cooking quickly on high heat is going to give you the best results. Cooking on direct heat at temperatures of 500*-600* is ideal.
The most widely-used method is deemed the 10-and-2 method; Grilling your steak at the 10 o'clock position for 2 minutes, then flipping the steak back into the 10 o'clock position for another 2 minutes. The second flip, flip the steak into the 2 o'clock position for 2 minutes, then flip again into the same 2 o'clock position for the final 2 minutes. This will give an average 1" steak a perfect medium rare cook.
On thicker cuts, not only is more time required but cooking at high heat will almost guarantee you will burn the outside of the steak before the insides are done to the doneness of your liking. With these cuts the best thing to do is cook at a lower temperature for a longer period of time then sear the steak at the very end with a high-heat sear. This can be done with direct heat on a couple burners or a side burner.
